In 1998, we chose the “Vrahos” region in mount Othrys, to create our family vineyard. The site is called “Prossilio” (Sun-bathed). It is located on a 400 m altitude and it is known for its steep inclination and its sandy and rugged, well drained ground. The conditions contribute to a medium-sized, yet high-quality crop.

We planted the Cabernet Sauvignon, Syrah, Malagouzia and Chardonnay varieties. The vines have perfectly adjusted to the ground and to the microclimate and they grow healthily. We use exclusively natural animal fertilizer and the vine cultivation is certified as organic. The natural mineral potential of the ground has not been depleted by methods of very intensive agriculture. Us using organic methods ensures the balanced state of the vineyard, and leads to the perfect quality of the grapes, which are harvested by hand and are extremely carefully placed in small buckets, in order to ensure the least possible damage thereof, every September. This way, we achieve the best wine quality.

To 1998 επιλέξαμε την περιοχή “Βράχος” στο όρος Όθρυς, για να δημιουργήσουμε τον οικογενειακό μας αμπελώνα. Ο τόπος ονομάζεται “Προσήλιο”. Βρίσκεται σε ύψος 400μ. και είναι γνωστός για την απότομη κλίση του και το αμμώδες και δύσβατο έδαφος με καλή αποστράγγιση. Οι συνθήκες προσφέρουν συγκομιδή μέτριας ποσότητας, αλλά υψηλής ποιότητας.

Φυτέψαμε ποικιλίες Cabernet Sauvignon, Syrah, Μαλαγουζιά και  Chardonnay. Τα αμπέλια έχουν προσαρμοστεί άριστα στο έδαφος και στο μικροκλίμα και έχουν υγιή ανάπτυξη. Χρησιμοποιούμε αποκλειστικά φυσικό ζωικό λίπασμα και η καλλιέργεια των αμπελιών είναι πιστοποιημένα βιολογική. Ο φυσικός ορυκτός πλούτος του εδάφους δεν έχει εξαντληθεί από μεθόδους υπερεντατικής αγροτικής καλλιέργειας. Το γεγονός ότι χρησιμοποιούμε βιολογικές μεθόδους εξασφαλίζει την ισορροπημένη, κατάσταση του αμπελώνα, με αποτέλεσμα την άριστη ποιότητα των σταφυλιών, τα οποία τρυγούνται με το χέρι και με ιδιαίτερη προσοχή τοποθετούνται μέσα σε μικρούς κάδους ώστε να διασφαλιστεί η μικρότερη δυνατή φθορά, κάθε Σεπτέμβρη. Έτσι επιτυγχάνουμε την καλύτερη ποιότητα κρασιών.

CABERNET SEUVIGNION

Cabernet Sauvignon is a wine with a high maturation potential, that “loves” the barrel both during the fermentation process and during the maturation process. The unique wood, vanilla and spices aromas deriving from the barrel are added to the black berry, gooseberry, eucalyptus and green pepper scents of the grape, soften its high tannins and add to the structure and multiplicity of the wine on multiple levels.

Syrah, one of the most popular varieties in the world, is amongst the top ten vine species mostly cultivated in the world. It has a deep ruby color, and the nose can grasp complex intense scents of raspberries, cherries, plums, licorice, dried fruit, tobacco, mocha, and spice notes, while the whole fragrance bouquet is accompanied by the distinct presence of the barrel. Within its flavor pallet, we encounter the traits of incredible concentration, exceptional depth and complexity. Magnificent mature tannins, a full body and fruity aftertaste with impressive duration.

MALAGOUZIA

The typical characteristics of Malagouzia in the glass are a moderate body, a medium acidity and a buttery oily sense in the mouth. It is quite aromatic, with notes of white flowers (jasmine, citrus fruit flowers), mature stone fruits (peach, apricot), and citrus fruits (lime, grapefruit, lemon). Moreover, if it is cultivated in a cold climate, we also encounter delicate herb notes (green tea, spearmint). Malagouzia may yield exceptional varietal wines, and be perfectly combined with Chardonnay, Assyrtiko or Sauvignon blanc.

CHARDONNAY

Chardonnay is the most popular white wine in the world. The aromatic pallet of the Chardonnay variety wines starts with citrus fruits and green fruits (cold climates) to mature stone fruits, mangoes, pineapples and bananas (warmer climates). By remaining in the barrel, it acquires a fuller body and rich butter and dried fruit scents. Its acidity varies from medium to high, according to the climate and the style.

The raw material may always be the same, however during the processing one has to find the right buttons to push in order to bring out the special characteristics of each and every good.
